     pecan Cake

Ingredients
1/2 c butter
1 1/2 c sugar
3/4 c milk
2 c flour
2 level teaspoons baking powder
1 c nuts chopped fine
4 whites of eggs
Chocolate Icing
1 c sugar
 
1/2 oz chocolate
1 white of egg ( beaten dry)
1/4 c water
1/2 tsp vanilla extract

Instructions
Sift flour and baking powder 3 times; cream butter, add sugar, then alternate milk and flour. lastly the whites of the eggs and nuts. Bake in sheet in a shallow pan 30 to 40 minutes. Icing directions- Boil sugar, water, and chocolate, stirring. Cover vessel and boil 3 minutes. Uncover and boil until it forms a soft ball when tested in cold water; then beat slowly into the white of egg and continue beating (after extract is added) until thickened sufficiently to spread on cakes.
