     Beef Stroganoff

Ingredients
1 tablespoon flour
1/2 teaspoon salt
1 pound beef round steak 1/4 in. strips
2 tablespoons butter
1 cup sliced mushrooms or 1 can
1/2 cup chopped onion
1 clove garlic, minced
2 tablespoons butter
3 tablespoons flour
 
1 1/4 cups beef broth
1 cup sour cream
6 ounces egg noodles

Instructions
Combine 1 T. flour and salt; coat meat with mixture. Heat blazer pan or chafing dish or skillet, then add 2 T. butter. When melted, add sirloin strips and brown quickly on both sides. Add mushroom slices, onion, and garlic; cook 3- 4 minutes or until onion is crisp-tender. Remove meat and mushrooms from pan.
Add 2 T. butter to pan dripping; blend in 3 T. flour. Add tomato paste. Stir in cold meat stock. Cook and stir over med-high heat until thickened and bubbly. Return browned meat and mushrooms to skillet and cook a few more minutes. Stir in sour cream; cook slowly until heated through. Do not boil. Serve over hot cooked buttered noodles.
INSTANT POT- Sear beef with onions and mushrooms in butter for a couple minutes. Sprinkle beef with flour, salt, and pepper. Stir. Add garlic and cook 30 seconds. Pour in 3 cups beef broth and deglaze bottom of pot. Place uncooked egg noodles in pot. Close lid and cook 4 minutes. Quick release when timer beeps. Mix in sour cream.
