     Meatless Mexican Casserole

Ingredients
1 1/2 cups crushed tortilla chips
1 (15 1/2-ounce) can drained garbanzo beans
1 (15 1/2-ounce) can drained kidney beans
1 (8-ounce) can tomato sauce
1 cup salsa
1 cup chopped onion
1 (15-ounce) can drained corn
1 chopped green pepper
1/4 cup chopped cilantro
 
1 teaspoon minced garlic
6 ounces grated Monterey Jack cheese
6 ounces grated Cheddar cheese
salt and pepper

Instructions
Preheat oven to 350°. Grease 9x13 pan. Scatter crushed tortilla chips on bottom. Combine everything but cheeses in a bowl. Place half of mixture evenly in the baking dish. Combine cheeses and sprinkle half of it over the mixture. Then cover the cheeses with remaining mean and bean mixture and sprinkle remaining cheese on top. Bake for 30 minutes and let stand 5 minutes before serving.
Serving Suggestions
Garnish with diced tomato, sour cream, and cilantro.
