Brown the ground beef over medium heat in 2 T.
of olive oil. Once the meat is brown, drain off
any excess grease and set aside. Add another
tablespoon of olive oil to the pan and add in
the peppers, onions and garlic. Cook for 10
minutes until the vegetables are softened and
then return the meat back to the pan. Add in
the cumin, salt and pepper, soy sauce,
worcestershire sauce and the tomato sauce. Stir
well to combine and then taste for seasonings.
Add cheese and let simmer for 15 minutes on
low heat.
