Wash the pork ribs, place them in a kettle, and barely cover them with water. Bring the water to a boil to
release the rib grease. Cool in the refrigerator, then skim off the hardened grease and discard the water.
Return ribs to the kettle, add fresh water to barely cover them, and cook them thoroughly. Drain ribs
(discarding water again), return them to the kettle, and add sauerkraut that has been drained and rinsed
(to reduce sodium content). Simmer about 1 hour. Serve.
