     Yellow Cake with Coconut

Ingredients
1 Cup Crisco Shortening
3 Cups Sugar
1 Teaspoon Salt
4 Large Eggs
2 Teaspoons Lemon Extract
2 Teaspoons Vanilla Extract
2 Cups Milk
4 1/2 Cups Gold Medal Flour, sifted
4 Teaspoons Baking Powder
 

Instructions
Cream shortening, sugar and salt. Add eggs and extracts and beat until smooth. Add 3/4 of the milk and blend in. (Do not overbeat.)
Sift flour and baking powder. Add to wet mixture and beat until smooth. Add remaining milk and stir well.
Pour into greased cake pans- 1 9x13 inch pan plus 1 9x9 inch pan, or 2 double-cake pans plus 1 9x9 inch pan.
Bake at 350 degrees until done.
