     Mexican Soup

Ingredients
2 tablespoons butter
2 medium potatoes diced
1/2 cup chopped onion
1/2 cup green chilies
2 cups water
1 (16-ounce) can whole or diced tomatoes
1 egg
8 ounces longhorn or colby cheese shredded or cut in strips
salt and pepper
 

Instructions
In a large saucepan set over low-medium heat, melt butter. Add potatoes, onion, and green chilies. Turn the heat up to medium and saute for 5 minutes. Add water, cover, reduce heat, and simmer until potatoes are nearly done (10- 15 minutes). Add tomatoes with juice and gently crush them with a fork. In a small bowl, beat the egg and then add it to the saucepan, allowing mixture to simmer 2-3 minutes. Add the cheese and stir until melted (2-3 minutes). Add salt and pepper.
