     Coconut Custard Pie

Ingredients
1/4 Cup Butter
1/2 Cup Self-Rising Flour
1 Cup Sugar
3 Eggs, well beaten
2 Cups Milk
1/2 Cup Flaked Coconut
2 Teaspoons Vanilla Extract
 

Instructions
Melt butter in 10 inch pie pan in a 350 degree oven. Sift flour with sugar. Add flour mix to eggs and beat until smooth.
Stir in milk, coconut and vanilla extract. Blend well. Pour into the buttered pie pan.
Bake at 350 degrees for about 45 minutes, or until knife inserted near center comes out clean.
NOTE- The pie forms its own crust while baking. If using All-Purpose Flour, add 1/2 teaspoon baking powder and 1/8 teaspoon salt.
Serving Suggestions
Serve warm or cold.
