     Carrot Cookies

Ingredients
1 cup shortening
3/4 cup sugar
1 egg
1 cup cooked, mashed carrot
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
 
ORANGE ICING-
2 tablespoons orange juice
1 cup powdered sugar
Instructions
Cream shortening and sugar. Add other ingredients. Drop on sheet. Bake at 375° until light brown, 10-15 minutes. Frost with orange icing.
