Combine any of your favorite spices in a bowl.
We like garlic salt, smoked paprika, pepper,
and cayenne. Maybe a teaspoon of each spice and
just enough lime juice to get it all to coat
all of your shrimp. Let your shrimp sit in
that mess for 30 mins.
Put strip(s) of cheese and sliver(s) of jalapeno
in the middle of each shrimp, then wrap with half-
strip of bacon and skewer with toothpick or kebab.
Wipe grill surface with onion (to prevent
sticking) and grill shrimp directly on grill rack
for 15 minutes or until bacon is crispy.
