     Rhubarb Custard Pie

Ingredients
3 Eggs, slightly beaten
1/2 Cup Half-and-Half
1 1/2 Cups Sugar
1 Tablespoon Flour
1/8 Teaspoon Salt
4 Cups Rhubarb, chopped
1 9-Inch Pie Shell, unbaked
 

Instructions
Preheat oven to 375 degrees. In large bowl, mix eggs and half-and-half. Add sugar, flour, salt, and rhubarb and mix thoroughly.
Pour mixture into unbaked pie shell. Bake at 375 degrees for 15 minutes; lower heat to 350 degrees and bake 20 - 30 minutes longer, or until set.
If desired, top pie with meringue during the last 15 minutes of baking.
