Heat oven to 425 degrees. Mince garlic and set
aside. Chop the onion, bell pepper, and broccoli
to the size of chickpeas. Combine with chickpeas.
Pour in oil and soy sauce, and then add spices and
stir.
Put vegetables and chickpeas on baking sheet and
bake for 20 minutes. Remove from the oven, add
garlic, and continue cooking for 15 more minutes.
Remove from oven and squeeze juice from 1/2 of
lime over roasted chickpeas and veggies. Stir.
Add pepper to taste. Assemble burritos with
spinach, avocado, cilantro, fire-roasted salsa, or
other preferred toppings.
