     SWISS STEAK

Ingredients
ALL INGREDIENT AMOUNTS APPROXIMATE
1 to 4 pounds of cube steak
2 cups chopped celery
1 large or 2 medium onions
small can mushrooms with liquid
8 oz.can tomato sauce
1 cup water
1 tablespoon sugar
2 teas salt
 
2 beef boullion cubes
2 teaspoons Kitchen Bouquet (Kitchen Bouquet
is a browning sauce sold in small bottles)

Instructions
You can use round steak, tenderized round steak instead of cube steak (which is pricy). If using round steak cut in pieces about the size of your hand and flour a lot, pounding the flour into the meat with a side of a heavy saucer. Whatever you use, flour then let it lay for a few minutes then flour again then brown meat in oi in skillet. For Kenneth and I, a couple pounds of meat was about right. If using less, you can reduce the other ingredients some. While meat is browning, put the rest of the ingredients in a heavy pan with a lid. add the browned meat and bake in oven about 2 hrs at 325. You can also cook on top of stove....very slowly. If gravy is not as thick as you like, mix a little corn starch or flour with cold watr and stir in slowly. Serve with mashed potatoes. This is one of mine and Kenneth's favorites.
Every person, every restaurant will make swiss steak differently. Some good, some pretty awful, some just pour canned tomatoes on top of some kind of meat..gross.
