Ingredients
2 skirt or flank steaks (1 1/2 to 2 lbs. each)
2 T. corn or vegetable oil
1 tsp. hot paprika
1 tsp. sweet paprika
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. garlic powder
1 tsp. dried thyme
1 tsp. ancho chili powder
 
1 tsp. salt
1/4 tsp. ground black pepper

Instructions
1. Rub the steaks on both sides with oil; set aside. In a small bowl, whisk together the hot paprika, sweet paprika, cumin, coriander, garlic power, thyme, ancho powder, salt, and pepper. Rub each side of the steaks generously with the spice mixture. Allow steaks to sit at room temperature for 25-30 minutes, while you heat the grill.
2. Heat the grill until very hot and place meat on the cooking grates over direct heat. Cover and seal by cooking for 3 minutes on the first side, turning 1/2 turn to form searing marks and cooking for 2 more minutes. Flip the steaks over and grill, covered for another 4 minutes for medium-rare (140 F).
3. Remove steaks from the grill and place on a cutting board. Cover with aluminum foil and allow them to rest, undisturbed, for 10 minutes. Slice steaks very thinly across the grain; transfer sliced steaks to a serving platter.
Serving Suggestions
Serve with tortillas, guacamole, and salsa.
