     Red Lentil Soup

1 Tbsp Rice Bran Oil
1 Onion
2 Cloves Garlic
1 Large Carrot
1 Tbsp Tomato Paste
500ml Vegetable Stock
1 Cup Washed Red Lentils
1/4 Tsp Salt
1/4 Tsp Pepper
1 Tsp Cumin
1 Pinch Chili Flakes

Heat oil in pot, and saute' onion, garlic, and carrot in oil.
Add tomato paste, cook for 2-3 minutes.
Add vegetable stock, lentils and seasoning, and cook for 30-40 minutes, or until all ingredients are cooked through.
Puree soup with stick bender.
