     Stovetop Macaroni and Cheese

Ingredients
3 cups uncooked elbow pasta
1 can of petite diced tomatoes
1 16oz block of sharp cheddar cheese, shredded
Water to boil pasta, plus 1/4 cup
2 tbs salt
Salt and Pepper to taste
 

Instructions
Bring water and 2 tbs salt to a full boil in a large pot. Add the pasta and cook for 11 minutes, stirring periodically to ensure the pasta does not stick. Meanwhile pour the tomatoes in a microwave safe bowl and add the 1/4 cup of water. Cover and heat the tomatoes for about two minutes during the last two minutes of the pasta's cook time until warm.
Turn off the burner and drain the pasta, then immediately put the pasta back into the hot pan and put it back on the burner; this will help melt the cheese. Pour in the heated tomatoes and stir. Add the shredded cheese by the handful and stir. Repeat until all of the cheese is used and melted. Salt and pepper to taste and serve immediately. Pasta dishes tend to benefit from salt so don't be scared to be generous with it but taste as you add.
The leftover mac and cheese is not as good as when first made so I take the leftovers and make baked macaroni and cheese. Just pour the leftovers in an appropriate sized casserole dish equivalent to the leftovers and stir in a cheese sauce. You can freeze the casserole dish for later. Additionally, you can add diced ham to the casserole to make it a main dish for later. You can top the casserole with bread crumbs or French Onions if you like and then add a bit more shredded cheddar to the top.
Use the cheese sauce recipe located in this book. You never want to add the hot cheese sauce to cold leftover mac and cheese so make the cheese sauce immediately after supper or re-heat the mac and cheese in the microwave until warm before adding the cheese sauce. To re-heat the casserole later bring to room temperature, about 45 minutes to an hour and then bake at 350 for about 45 minutes. Watch it, you may need to cover it with foil if it gets too brown while cooking.
