     Baked Crook Neck Squash or Zucchini

Ingredients
1 crook neck squash sliced in 1/4 inch thick slices
2 dozen cherry tomatoes cut in half
1 sweet onion sliced
1/4 c olive oil
1/4 balsamic vinegar
2 T dijon mutard
S & P
1/4 c crumbled feta
 

Instructions
Layer veg into a oiled/greased casserole dish.
Whisk together oil vinegar mustard s&p. Pour over veg. Top with feta. Cover dish
Bake About 30-40 min at 400 till squash is easily pierced. Can uncover to let juices dehydrate. Even better the next day.
