     Pan seared Cod in White Wine Sauce

Ingredients
For the sauce
2T EVO
1/2 tsp red pepper flakes
2 lg cloves mined garlic
1 pint cherry tomattoes halved
1/4 c dry white wine
1/2 fresh basil fine chopped
2 T lemon juice
1/2 tsp lemon zest or more
 
1/2 tsp salt
/4 tsp pepper
For the cod
2 T EVO
cod thawed
salt and pepper

Instructions
Sauce- heat oil in lg non stick saute pan over med heat. Add pepper flakes and garlic. Saute 1 min. Add cherry tomatoes and cook stirring occasionally till blistered but still hold their shape. About 12 min. Add in the wine an bring to a light simmer. Stir in the basil and lemon juice lemon zest and salt and pepper. Cook for 2 min. Transfer to a bowl
Cod- Heat oil in non stick saute pan over med heat. Season cod on both sides with salt and pepper. Place in oiled pan and cook till brown about 5 min per side depending on thickness
Top with sauce.
