optional- 1 sun dried tomato chicken sausage (Trader Joes)
Instructions
Saute the asparagus and mushrooms in olive oil until close to tender in a pan.
Optional- for added protein, slice chicken sausage and saute with veggies until browned.
Add in frozen cauliflower rice and cook for three minutes.
Stir in the pesto and mozzarella cheese until fully mixed in and melted to your like. Transfer to a bowl and sprinkle with parmesan cheese.
