Combine bread crumbs, cornmeal, paprika, thyme, lemon peel, salt
and pepper. Mix well. In a shallow bowl, lightly beat egg white. Dip
each piece of fish into egg white, draining off excess, then dredge in
bread crumb mixture, turning to coat. Place on prepared baking
sheet.

Bake until bottom of fish is golden brown, about 7 minutes. Using a
spatula, turn fillets and bake until just cooked, about 5-6 minutes.
Garnish with lemon wedge and serve.
