2 large chicken breasts – shredded (crockpot) or rotisserie chicken (recommended)
3 medium avocados
1 cup corn
1 medium tomato, chopped (optional)
6 oz bacon, chopped
¼ cup chives or green onion, chopped
2 tbsp chopped dill
2 hard-boiled eggs, chopped (optional)
Instructions
Lemon dressing-
-3 tbsp fresh lemon juice
-3 tbsp extra virgin oliv oil
-1 tsp sea salt
-1/8 tsp pepper
Dice or shred chicken breasts and place into large mixing bowl. Peel and pit avocados and slice into bite-sized pieces to add to bowl. Add 1 cup of cooked corn, ¼ cup chopped green onion, chopped bacon, and 2 tsp of dill. Add dressing ingredients to small bowl and stir. Drizzle over salad and toss to combine.
