     Kilt Lettuce

Ingredients
1 head of green leaf lettuce, cleaned (you can use any lettuce, but I like romaine/ leafy green)
1 cup green onions (scallions), chopped
1 cup diced white onion
Diced cooked bacon, about 6-8 slices (I use Turkey bacon)
1 tsp. salt & pepper
1/4 cup oil
1 tbsp. vinegar (white wine or apple cider)
Large metal bowl/salad bowl
small cooking pan
 

Instructions
Cook sliced bacon, then diced in small squares Dice white onion and green onion separately in 1/2 inch squares In a large mixing bowl, add clean cut lettuce…then add on top raw diced white onions, raw diced green onions, and diced cooked bacon
Next, pour vinegar over lettuce mix bowl Salt & Pepper lettuce mix bowl for taste Next, heat amount of oil in a small pan until very hot, almost smoking
Transfer heated oil over and pour on top of lettuce mix bowl Stir bowl of lettuce with tongs, so that oil is mixed thoroughly, just enough to wilt the lettuce pieces Enjoy!
