Preheat oven to 400 degrees
Rub each tenderloin with spice rub all over
generously
Marinate in fridge for 3 hours or overnight
In cast iron skillet or Dutch oven, brown
tenderloins all over - about 10 min
Transfer to oven (with Probe)
Roast until internal temp is 145 - about 20 min

Suggestions
Serve with yogurt mixed with carnitas spice, OR balsamic plums and veggie as side
