     Maple Soy Salmon

Ingredients
8 salmon fillets
1/2 of a lemon (optional)
4 ts EVOO
1/8 ts ground cinnamon
1/2 Tb onion powder
1tb garlic powder
A tad over 1/4ts of salt
Half of 1/8 ts black pepper
1/4 c soy sauce
 
1/2 c maple syrup

Instructions
In a small bowl, mix together cinnamon, garlic powder, salt, onion powder and black pepper.
Dry salmon fillets. Optional- Rub each fillet with the lemon. Rub 2ts of oil on the flesh side of the fillet. Sprinkle each fillet with the spices and let sit covered in fridge for 1 hour.
In a small saucepan, mix soy sauce and maple syrup over medium heat until sauce is thick and coats the back of a spoon.
Coat bottom of a non stick skillet with 2ts of oil. Heat on medium until hot. Place salmon, skin side up and cook for about 4 minutes until brown. Turn over and cook remaining side for 4-5 minutes until fully cooked. Pour sauce over salmon fillets and serve.
