     Chicken Enchiladas

Mexican Shredded Chicken
Corn Tortillas (depends on how many enchiladas you want to make)
Enchilada Sauce (store bought or homemade)
Shredded Cheese

Preheat oven to 350. Wrap the tortillas in a damp paper towel and microwave for 30 seconds to soften them. Cover the bottom of your oven safe pan with enchilada sauce.
Add about cup chicken to one tortilla at a time and roll it up. Add it seam side down to your pan.
After all enchiladas are added top with enchilada sauce and cheese. Cover the pan with foil and bake for about 15 minutes.
Take the foil off and bake for an additional 5 minutes until all the cheese is melted.
