     Salmon with Zesty Sauce

Ingredients
2 salmon steaks or filets (I usually use filets)
1 TBLS fresh line juice
1 1/2 tsp butter, melted
salt and pepper
snipped fresh chives
lime wedges
For sauce-
1 1/2 tsp butter
 
2 jalepenos, seeded and diced (or leave seeds if you want it hotter)
3/4 tsp fresh lime juice
salt and ground white pepper
1/3 cup sour cream

Instructions
Prepare grill to about 350 degrees. You can cook the salmon and planks or in a fish basket.
Place salmon in dish. Mix line juice and butter. Brush over salmon, sprinkle with salt and pepper. Let stand for 15 minutes.
Place fish on planks or on the grill until done about 15 minutes.
Meanwhile make the sauce- Melt butter in small saucepan over low heat (I use the same one that I used to melt the butter above). Add chiles and cook until tender - about 3 minutes stirring occasionally. Add sour cream and stir until heated thoroughly. Do not boil. Mix in lime juice. Add salt and pepper. Transfer fish to a platter and spoon sauce over to serve. Sprinkle with chives.
