Heat a little oil or butter in a frying pan, add
chopped onion & 2 dessertspoons of arborio rice per
person. Stir, do not have the heat too high, to
avoid burning the ingredients.
When the onion starts to soften add a little of
your hot liquid, either stock or water, stir.
When the liquid has been absorbed, add a little
more, plus your other ingredients, first adding
those that need a longer cooking time. Stir.
As liquid is absorbed, add more, don't flood the
pan and don't allow it to get too dry, we're aiming
for moist rather than soggy.
When the rice looks cooked taste it & add more
liquid if necessary, stir & allow to absorb.
Do not overcook.
Season & add your preferred choice of herbs.
Serve with plain cashew nuts & Parmesan.
