     Green Beans with Maple Vinaigrette

Ingredients
3/4c whole pecans
2lb of green beans
1/4c EVOO
1T red wine vinegar
2T Dijon mustard
1T maple syrup
1/2tsp salt
1/4ts ground pepper
 

Instructions
Heat oven to 375 degrees. Spread pecan on baking sheet and bake, tossing once, until toasted. About 6-8 minutes. Let cool and roughly chop.
Cook green beans in a large stock pot with salted boiling water. Drain and run under cold water to cool.
In a large bowl, whisk together EVOO, vinegar, Dijon, maple syrup, salt and pepper. Add green beans and pecans. Toss and serve.
