     Turkey Carcass Soup

Ingredients
1 turkey carcass
4 qrts waer
6 small potatoes diced or long grain rice
4 large carrots,diced
2 celery stalks, diced
1 large onion, diced
1 T Worcestershire sauce
1 1/2 t. salt
1 t. dried parsley
 
1 t. basil
1 bay leaf
1/4 t. ground pepper
1/4 t. paprika
1 pinch dried thyme

Instructions
1. Place the turkey carcass into a large soup pot and pour in water; bring to a boil, reduce heat to simmer and cook the turkey until remaining meat falls off the bones, about 1 hour. Remove the turkey carcass and clean off meat. Chop meat.
2. Strain the broth through a fine mesh strainer into a clean soup pot. Add the chopped turkey; bring the pot to a boil, reduce heat and stir in potatoes or rice and remaining ingredients. Simmer until vegetables' are tender; about 1 more hour.
