Sprinkle Flour on surface, tip dough out onto
Flour. Knead (Fold, press & turn 10 - 12
times). Roll out approx 1/2 in thick. Cut
without twisting using a 5 cm / 2in cutter.
Place on paper-lined baking sheets. Glaze with
milk mixture with bit of egg added. Allow to
rest 15 mins before baking. Bake on top rack
only.
