Place bread in large mixing bowl. Saute onion, celery and garlic in butter until transparent. Pour over bread. Pour hot stock water over bread and sauteed ingredients until moist and holds together. Vary amount of liquid to suit personal taste in moistness. If stuffing in bird, chill first and do not stuff until ready to bake bird. Place stuffing in large buttered casserole dish, uncovered, at 350 for 1 hour
