     Chili Cheese Puff

Ingredients
10 eggs, but I usually put a whole dozen in
16 oz. Cottage Cheese, small curd
2 cups of MontereyJack Cheese, shredded
2 cups of Cheddar Cheese, shredded
1/4 cup flour
1 teaspoon of baking powder
1/2 teaspoon of salt
2 - 4 oz. cans of whole green chiles, deseeded and diced
1/2 cup butter, melted
 

Instructions
Preheat oven t0 350.Set butter in a 9X13 pan and melt in the oven.
Mix 3 cheeses together in a large bowl with green chiles, flour and baking powder. Mix eggs in a blender until light yellow. Add to the cheese mixture and stir until well mixed. Add melted butter slowly and stir.
Pour into the 9X13 Casserole pan and bake for about 50-55 minutes. Let cool for 10 minutes until set.
this is a perfect breakfast casserole to serve to company or to cut into squares and freeze for instant breakfasts on busy mornings. Just pop in the microwave and you are done!
