     Chicken Vegetable Saute

Ingredients
2 tbsp butter or margarine
1 tsp finely chopped fresh garlic
2 whole boneless chicken breasts skinned, halved
3 cups broccoli flowerets
2 cups fresh mushrooms halved
1 med onion cut into eighths
1/4 cup sherry or chicken broth
1 tbsp soy sauce
1/4 tsp salt
 
1/4 tsp pepper
1 tbsp cornstarch
2 tbsp water
2 medium cubed 1 inch ripe tomatoes
Cooked rice

Instructions
In 10 inch skillet melt butter until sizzling, stir in garlic, add chicken. Cook over medium high heat. Turning once until chicken is lightly browned( 5-6 minutes per side). Remove chicken keep warm. Reduce heat to medium, stir in broccoli,mushrooms,onions, sherry,soy sauce, salt and pepper.
Continue cooking stirring occasionally until vegetables are crispy and tender(5-7 minutes). Meanwhile in small bowl stir together cornstarch and water,stir cornstarch mixture liquid into skillet. Continue cooking stirring constantly until liquid is thickened(1-2 minutes). Add tomatoes and chicken. Cover and reduce heat to low. Cook until tomatoes are heated through(2-3 minutes) serve over hot cooked rice.
