     Spicy Thai Chicken coconut soup

Ingredients
4 minced garlic cloves
1 stalk lemongrass,halved lengthwise
2 tsp sambal oelek
3 C chicken stock
1 1/4 C coconut milk
4 tsp fish sauce
1 tbl sugar
2 C shredded cooked chicken breast
1/2 C green onion strips
 
3 tbl chopped fresh cilantro
1/4 C fresh lime juice
2 tsp canola oil
1 C sliced mushrooms
4 tsp minced peeled fresh ginger
1/2 C sliced red bell pepper

Instructions
Heat a dutch oven over medium heat. Add oil to pan, swirl to coat....Add mushrooms,bell pepper,ginger,garlic and lemon grass...Cook 3 minutes,stirring occasionally... Add chile paste and cook 1 minute. add chicken stock,coconut milk,fish sauce,and sugar. Bring to a simmer. Reduce heat to low and simmer half hour. Add chicken to pan and cook 10 minutes. Discard lemongrass. Add lime juice. Spoon into bowls and top with cilantro and onion strips
