Preheat oven to 400 degrees F
Bake or microwave sweet potatoes and mash til
smooth to equal 3 pounds. (optional- use 2-24 oz
pkgs or frozen steam-and-mash sweet potatoes)

Add butter, brown sugar, maple syrup, orange zest
and salt. Spoon mixture into 8 (6 oz ) custard
cups. Place on a baking sheet.

|
Beat egg whites at high speed with electric mixer
until foamy. Add sugar 1 TB at a time, beating
until stiff peaks form and sugar is dissolved.
Spread meringue over sweet potato mixture.
|
|
|
Bake at 400 for 10 min or until golden brown.
