Heat oven to 375° Sift flour, soda and salt together. Cream shortening, sugar and egg yolk until very light and fluffy. Add flour mixture alternately with the buttermilk. Add vanilla. Fold in stiffly beaten egg white. Drop by spoonfuls about 3 inches apart on a greased cookie sheet. Sprinkle with sugar, if desired, or use chopped nuts, raisins or grated lemon rind. Bake about 20 minutes, until just golden brown.
