Preheat oven to 210. Season each breast with
the basil, salt and pepper. Heat oil in a large
oven proof skillet on md-high heat. Sear the
chicken on both sides about 4 minutes each
side. Transfer chicken to a plate. drain most
of the excess oil ,leaving about a tsp worth.
Return the skillet back to the stove , fry garlic
until fragrant about 1 min. Add vinegar and brown
sugar stirring to combine. Bring to a simmer and
stir occasionally until thickened (about 6
minutes)
Return the chicken to the pan, turning in the
glaze to evenly coat. Add 1C of the tomatoes
whole around the chicken and place the chicken
into the oven. Bake until the chicken is cooked
about 45 minutes. Top each chicken with a slice
of mozzarella and return back into the oven for
a further 5 minutes or until melted. Slice the
remaining 1/2 C tomatoes in half and place on
top of chicken Pour some of the sauce over
chicken. Serve immediately with balsamic glaze
if desired
Glaze- Combine vinegar and sugar in pan . Bring to
the boil and reduce heat.Simmer until reduced by
half about 7-10 minutes.
