     Ranchero Sauce

Ingredients
1 TBSP vegetable oil
1 cup chopped onion (appoximately 1 onion)
1/2 cup chopped red bell pepper (1/2 bell pepper)
1/2 cup chopped green bell pepper (1/2 bell pepper)
1 tsp ground cumin
1/2 tsp salt
1 TBSP minced jalapeno (1/2 jalapeno)
1 tsp minced garlic
1 cup chopped tomatoes and their juice (about 2 tomatoes)
 
1 cup chicken stock
210 g box of tomato sauce (8 oz)
3 TBSP cilantro (optional)

Instructions
In a medium pot, heat the oil over medium-high heat. Add the onions and bell peppers, and cook, stirring, for 3 to 5 minutes. Add the cumin, salt, jalapeno, and garlic and cook, stirring for 30 seconds. Add the tomatoes and their juices and cook, stirring, for 2 minutes. Add the chicken stock and tomato sauce and simmer until thickened, about 15 minutes. Remove from heat and add the cilantro.
