     Toasted Almond Truffles

Servings   2 dozen truffles

1/2 Cup evaporated milk
1/4 Cup granulated white sugar
1 3/4 Cup (11.5 oz pkg) milk chocolate chips
1/2 to 1 tsp almond extract
1 Cup sliced almonds, toasted, finely chopped

Combine evaporated milk and sugar in small, deavy duty saucepan. Bring to a full rolling boil over medium low heat, stirring constantly. Continue to boil stirring constantly for 3 minutes. Remove from heat.
Vigorously stir in chocolate chips until smooth. Stir in almond extract. Refrigerate for 1 1/2 to 2 hours.
Remove from fridge and shape into 1 inch balls; roll in nuts. Cover and refrigerate until ready to serve.
