     Mom's split pea soup

Servings   6 to 8 good sized

Ingredients
6 cups water
1 bag dried split peas
4 strips of bacon, cut into small pieces
1 medium onion, chopped
3 medium carrots, sliced
3 medium stalks celery, sliced
2 cans chicken broth
1 lb. ham piece (boneless ham slice works well), trim fat, cut into small chunks
 

Instructions
* start by cooking the bacon over low to medium heat in an 8 quart saucepan or Dutch oven * when about half cooked add onion and cook together until the onions clear
* add the chicken broth, ham, carrots, celery, and water * heat to a boil, stir in the peas and reduce heat to a simmer with a cover * stir occasionally
* cook 2 1/2 to 3 hours or until the peas soften and break down * add a little more water if needed
Serving Suggestions
serve with croutons
