     Lime Chicken Meal Prep Bowls

Ingredients
2-3 lbs chicken breast, cut into bite sized pieces
6 Tbsp. olive oil
3 Tbsp. red wine vinegar
Juice from 2 limes
2 tsp. chili powder
1 tsp. paprika
1 tsp. garlic powder
1 tsp. salt
fresh pepper to taste
 
3 cups quinoa, cooked
Fresh cilantro

Instructions
In a large resealable bag, combine olive oil, vinegar, lime juice, chili powder, paprika, garlic powder, salt and pepper. Cut chicken into cubes and add to marinade. Toss to coat. Marinate for 2 hours up to overnight. Preheat oven to 400 degrees. Pour marinated chicken onto baking sheet and bake in preheated over for 20 minutes or until chicken is cooked through.
Divide quinoa among 6 meal prep containers. Divide chicken among the containers as well. Freeze until ready to eat.
Serving Suggestions
Serve with lime wedges and fresh cilantro.
