     Greek Chicken Bowls

Ingredients
2 lbs. chicken breast
olive oil
Cavendar's Greek Seasoning
Fresh cucumber, chopped
Fresh green pepper, chopped
Cherry tomatoes, halved
Red onion, thinly sliced
Feta cheese crumbles
2 cups brown rice, cooked
 
Baby arugula, or other greens
Kalamata olives
Sliced pepperochini's
Capers
Greek Vinaigrette Dressing (from this recipe book)
Plain Greek yogurt
Lemon wedges

Instructions
For the chicken- Massage olive oil and Cavendar's seasoning over chicken and marinate for at least 20 minutes, grill then let rest for 10 minutes. Cut into bite sized pieces.
Assemble bowls to your liking with the rice, chicken, arugula, cucumbers, green pepper, tomatoes, onions, olives, pepperoncini's, capers, feta, vinaigrette dressing and Greek yogurt. Squeeze lemon juice over top.
