     Eggs Benedict Cups

Ingredients
12 slices white bread sliced thin crust removed and rolled thin with rolling pan
1/4 cup butter melted
10 slices canadian bacon or lump crap meat, chopped fine.
12 eggs
Hollandaise sauce
 

Instructions
spray a 12 cup muffin tin pan with PAM (love cooking with PAM - what a great name). Brush bread slice with butter and pat into muffin cups. Put canadian bacon in cups till 3/4 c. full. Crack an egg in each cup and sprinkle with salt and pepper. Brush crusts around each cup with remaining butter. Bake at 400 degrees for about 20 minutes. Top with hollandaise sauce.
