     Pork with Baked Apple

Ingredients
4 oz Pork Loin
1/4 c Apple Cider
1/4 c Sliced Apples
1 Garlic Clove, minced
2 c Shredded Kale
1/4 c Shredded Carrots
1/2 c black beans
2 tbs Red Wine Vinegar
1 tsp Olive Oil
 

Instructions
Preheat the oven to 350 degrees. Marinate pork loin in apple cider for 5 minutes.
Sear each side of pork in an ovenproof skillet coated with nonstick cooking spray for 1 to 2 minutes. Add sliced apple and 1 tablespoon marinade to pork and bake for 10 minutes.
Meanwhile, saute garlic clove in olive oil in a medium skillet for 1 minute. Add kale, carrot, and black beans. Cook 2 minutes. Mix in red wine vinegar and cook until heated through.
