2 tbsp butter
|
|
2 tbsp olive oil
|
|
2 apples- peeled and sliced
|
|
1 red onion- halved and sliced
|
|
2 bunches kale= trimmed & coarsley chopped
|

2 tbs balsamic vinegar
|
|
1 tbsp dijon mustard
|
|
1 tsp salt
|
|
1/2 tsp pepper
|

Instructions |
|
|
Heat butter & oil in large skillet over medium-high heat. Add apples & onions. Saute 8 minutes or until browned & tender. Remove from skillet.
|

Reduce heat to medium. Add kale to skillet. Cover and let wilt 3 minutes, stirring occasionally. Transfer to bowl.
|

|
Whisk together vinegar, mustard, salt & pepper. Add to apple mixture.
