     Roasted Pear Feta Hazelnut Salad

Ingredients
4 med ripe pears
1 shallot thinly sliced
1 T maple syrup or honey
1 T fresh lemon juice
5 to 6 sprigs fresh Thyme
salt and pepper
Salad-
12 c mixed greens.
Sprinkle of red wine or sherry vinegar.
 
drizzle of EVO
salt and pepper
3 oz crumbled feta cheese
1/2 c toasted hazelnuts. Walnuts are good too
handful of cranberries
I made the dressing with a cranberry/pear vinegar.
2 T vinegar to 3 T EVO and a couple T of either honey or maple syrup.

Instructions
Preheat oven to 375. Cut the pears into 8. Take out core but leave skin on. Toss the pears with shallot, maple syrup, lemon juice thyme and S&P. Arrange in a single layer on a parchment lined baking sheet. Roast uncovered for 20 to 30 min stirring once or twice until pears are fork tender.
I layered in a bowl starting with greens then pears and cheese then nuts. Drizzle with dressing. I used a fairly robust mixture of greens.
