     Kale Salad 2018

Ingredients
Apple Cider dressing-
1/3 c EVO
3 T apple cider vinegar
2 T fresh lemon juice
2 T dijon mustard (I used grainy)
2 T maple syrup
1/4 tsp each S&P
Salad-4 cups packed chopped kale ribs removed
 
2 c finely grated red cabbage (I used a bag slaw mix)
2 c grated carrots
1 c dried cranberries
3/4 c pumpkin seeds
1/2 c chopped green onion
1/3 c parsely (I did not have this time)

Instructions
Whisk together dressing ingredients and set aside.
Place chopped kale into a lg bowl and add 1/4 c of the dressing. Massage the kale for 5 min. Kale will break down and be lovely to chew.
Add all remaining ingredients and at least 6 T more dressing. Mix well. Cover. Refrigerate at least 1 hour before serving. Makes about 8 c.
