     Brussel Sprouts and Wild Rice Dressing

Ingredients
3 Cups brussel sprouts, sliced 1/8 inch
1/3 cup dried cranberries
1/2 lb. Applewood Smoked Bacon
2 cups sliced mushrooms
3 cupd cooked Lundberg Wild Rice Blend
1 tablespoon garlic, minced
1/3 cup onion, chopped
2 tablespoons Balsamic Vinegar
2 tablespoons dark brown sugar
 

Instructions
Place shredded Brussel sprouts in a heavy skillet with enough water to come half way up the sprouts. Add cranberries and bring to a boil, reduce heat and simmer for 3 minutes. Drain and set aside. Heat skillet, add bacon and cook until just browned. Remove and chop bacon into 1/2 inch chunks. Drain a bit of the drippings, depending on your taste, and add mushrooms, garlic, onions, and chopped bacon and saute for 3 to 4 minutes. Add Brussel sprouts, vinegar and brown sugar and cook until heated through. Toss in the cooked wild rice blend. Heat through and serve. Salt and pepper to taste.
Costco had a Sprouted Crimson Lentil, Wild Rice and Quinoa Blend which is what I highly recommend. It was delicious. I also had a Blackberry Balsamic Vinegar which I also used instead of the plain. I think you could easily add celery and saute with the mushrooms and onions. We would give this recipe 5 stars as a side dish.
Serving Suggestions
This goes great with chicken or pork.
