     Instant Pot Thai Tea

Ingredients
Water
1c (1.5c) loose tea leaves or Thai tea powder
2 to 2.5c (3 to 3.5c) sugar
Half and half
Boba
Boba straws
 

Instructions
This is for a 6 qt (8qt IP will be in parentheses). You can make this overnight or two nights before in order to chill.
Fill water close to max line, leaving space for some tea leaves. Add tea leaves. Set High Pressure for 30 minutes, then quick release. Strain tea through sieve, making sure to also discard the super fine tea leaves that collect at the bottom of the tea even after straining.
Add sugar. You will need this much sugar because when you add ice and half and half, the beverage will dilute. Add about 1 inch of half and half, boba and serve.
PREPARATION ON STOVE- Boil 24 cups of water (a huge pot of water). Add about 1-1.5 cups of tea leaves in a mesh bag. Then add to the water. Bring water to a boil and swirl the mesh bag around. Take out mesh bag. Ad 2-2.5 cup of sugar. Refrigerate overnight and serve.
