     Slow Cooker Boeuf Bourguignon

Ingredients
Lardons
3 lbs boneless chuck, cubed
1 cup red wine
2 cups chicken/beef bouillon/broth
1/2 cup tomato sauce
1/4 cup soy sauce
1/4 cup flour
3 garlic cloves, finely chopped
2 tablespoons fresh thyme, finely chopped
 
5 medium carrots, thickly sliced
1 lb baby potatoes
8 oz fresh mushrooms, sliced
Pearl onions (this is my addition)
fresh chopped parsley (garnish)

Instructions
Crisp lardons over high heat, add lardons to slow cooker. Salt/pepper beef and sear in bacon fat, add to cooker. Brown pearl onions in fat, add to cooker.
Deglaze pan with red wine, simmer and add broth, tomato sauce, and soy sauce. Simmer/reduce. Slowly whisk in flour and then add sauce to cooker.
Add garlic, thyme, carrots, potatoes, and mushrooms to cooker. Stir and cook until beef is tender... 8-10 hours on low or 6-8 on high.
