Crisp lardons over high heat, add lardons to slow
cooker. Salt/pepper beef and sear in bacon fat,
add to cooker. Brown pearl onions in fat, add to
cooker.
Deglaze pan with red wine, simmer and add broth,
tomato sauce, and soy sauce. Simmer/reduce. Slowly
whisk in flour and then add sauce to cooker.
Add garlic, thyme, carrots, potatoes, and
mushrooms to cooker. Stir and cook until beef is
tender... 8-10 hours on low or 6-8 on high.
